I can do jalapenos fine usually. I don't know what it is; specifically the chipotles in adobo. Maybe it's the brand I used or something, since I was using only one pepper from it at a time.
I've never understood canned chipotles, because even putting one of them in a recipe seems to make it nuclear spicy. I'm not someone who's out there downing ghost peppers, but I wouldn't say I shy away from spice, either, yet I can't get canned chipotles not to set a dish on fire.
Fully agreed. I read it last month and immediately started applying it to how I cooked on the grill and it really upped my game. The source website is also a massive rabbit hole with exploring.

I don't have Real Cooking but I have two of Slater's other books: Notes From the Larder and Tender, and they are both really great.
Good call on Flavor Bible. I use that one all the time. For a while there they were really cranking out these kinds of books and they were all essential.
