I read somewhere to crack the egg into a small cup before putting it into the water, and now I always do that. Works pretty well! Sometimes I still end up breaking the yolk because I'm actually kind of crappy at cracking eggs, and I'm sure the eggs don't look nice enough for restaurant service, but it's good enough

I've never considered myself as "someone who can cook" but I never found poached eggs all that difficult once I got a deep enough pan. Maybe I'm just okay with eggs. (Or maybe it's practice- I make them a couple times a week to put on top of my lunch salad.)

When I first moved to Europe, seeing the shelf full of eggs in the supermarket freaked me out a bit. I've gotten used to it by now, mostly because I have housemates and if I accept that eggs can be left out then I have more space in the fridge for other things.

A friend of mine once said that van Damme was a great Hong Kong action star who was unfortunately born in Belgium, and I think he's pretty right about that.
