There are a lot of good vegan Chinese, Indonesian, Thai, etc. dishes. Basically most eastern cuisines, probably because they have a lot of vegetarians to feed and so they've developed tasty ways to do it, rather than just cutting the meat out of western dishes.
I assume the implication here is that the coworkers hate him because they're jealous, right? Anyone who hates the smell of butter chicken has given up any right to have their olfactory feelings taken into consideration.
Or just order the spices from Savory or Penzey's (or Amazon). There's no longer an excuse for those who don't have an Indian market handy.
You should try making paneer. It's ridiculously easy, and I say that as someone who doesn't generally go in for making cheese (I tried mozzarella once - too much work for the result). It only takes a half hour, most of which is unattended while the cheese drains - you can do it while you're prepping and assembling…
There's a food truck in my town that does Indian burritos. Same concept. Always delightful (and I always end up with the filling on my shirt - naan just doesn't hold fillings in the same way a tortilla does).
Was going to point out this same thing. Goan vindaloo is also often very sour (from the vinegar), which you don't get a lot of in the US. Sour and spicy is an excellent combination and one you don't get a lot of here.
