Don't the producers also have to take into account that the characters will age? I haven't read the books, but I would think that as the saga goes on Claire and Jamie will age, and it's easier to depict that if the actors aren't too young to begin with.
Since I've never seen it in real life, I have no way of knowing for sure.

I have to say that I agree with you on Breaking Bad. Not that I don't recognize it as quality television; I tried watching a couple of times, but it's storyline just didn't appeal to me.
Just watch the first five minutes of the pilot. That's all it took for me to be won over. It's the only show on regular network television that I truly look forward to each week. Last year it was on a lot of critics top ten lists—and justifiably so.
