Perhasp someone has already mentioned it, but the chefs bought their "proteins" before they knew where and with what they'd be cooking. I mean, they probably could have guessed they'd be cooking outdoors, but if you're told you're going to have to cook something high-end you go with what you know.

The Colonel's Sauce has spawned many pale and not-so-pale imitations. I guess you could say the Colonel got around.

You're right, Deep Southerner, Cane's is good. We have something like it here in NC called Zaxby's. But I've got to join in on the Popeye's love, especially for the red beans and rice. That was our tailgating food before LSU football games.

Anybody else notice that it was Mattin's veloute that someone pointed out was boiling over? I'm just not sure about this guy's cooking skills at this point.

I don't think it's the flavor (or lack thereof) that makes chef avoid tofu, but the texture. If you don't drain it and cook it right it can be an unpleasant morsel of mush.
