The majority of "mystery" series are cancelled before they complete their story. Most of those are, admittedly, already clearly crap before their cancellation, but still, that means that even the rare mystery series that knows where it's going isn't guaranteed to get there.

This has been discussed since it was in the previews. He said that in the book, too. Either "red god" just means "fire", or he considers R'hllor an aspect of the Many-Faced God.
I don't think their deal with W&H had them signing away their souls as with other W&H contracts. The whole point of the firm giving them the business was to subtly corrupt them and keep them busy, not to just take their souls.
This is prime bait for a "reposted AV Club comments" gimmick.
