I would think that in an arid climate like Mexico / southern California, the guts camo would have a much shorter shelf-life as it would dry out a lot faster and have less of an odor sooner.
FTWD is a very condensed version of the original. Same plot lines, just faster. So, it makes sense that the walkers turn faster.
There are still other diseases out there. You could get a staph infection that could kill you separate from the zombie pathogen.
