They're pros, that's why they don't break. Fallon (and to an extent, Sanz) is terrible in that regard. it's funny on occasion, but man, they did it way, way too much.

Hodor really finds his voice when he raps. It's his only outlet.
He's certainly got more personality, but I don't think he's yet got more character. I like Tim and Rachel a lot, and I think it's solid writing and acting that lets us get a bead on them even though they have somewhere between 2-7 lines per season.
I'd guess its the comfort of routine in prison that not only lets him set his mind to individual tasks, but also makes it easier for him to stay on any meds he might be on. I'd also think that Arlo is respected enough in that corner that no one hassles him much, so prison's probably relatively low stress for him.
