Joss explains the regression in Mal's behavior in the commentary to the movie. As @avclub-e56eea9a45b153de634b23780365f976:disqus said, he had to go over a lot of the same stuff again in order to construct a proper character arc for Mal in a movie that was made not just for Firefly fans, but newbies as well.
