I started with Evangelion, and I loved it. It worked as a gateway for me. That said, I wouldn't recommend it as a gateway to most other people.
Paprika's great, but I think Perfect Blue has a bigger cult following.
My spoon is too big.
But that knowledge of mecha-anime isn't required to enjoy it. I had absolutely no understanding of it myself when I started watching, but I loved it nonetheless.

Neon Genesis Evangelion
I think a cool next step for those who enjoy action/sci-fi anime shows (Cowboy Bebop, Ghost In The Shell, etc…) would be Neon Genesis Evangelion. It's 26 episodes and two movies (actually only one real movie, the other is just a recap of the series). Very different kind of show, for sure, but…

The problem with Keanu is; he does have to play human in some scenes. In that case, be happy he wasn't cast.

… but casting Haley as Rorschach was a stroke of genius.
I'm no big Leno fan, but his interviews are usually okay. Carson Daly's however, hurt to watch. I can never stand to watch more than 30 seconds of any Daly interview. He can't make anything or anyone sound even remotely interesting. Your list is flawed.
This was a great one, but it doesn't top Teri Garr's Random Roles. Easily the best RR ever.
Chick and bitchezzz are timeless.
