Spacecataz was genius; I still can't watch it without laughing. That said, there clearly wasn't another episode's worth in there.

I'm not so hot on the newer ones, but Grim Fandango, Day of the Tentacle, Sam and Max Hit the Road, and the Monkey Island series are essentials. The Myst series is another obvious classic (as long as you're OK with an adventure game with no inventory).
