I threw together some pasta for me and my boyfriend the other night that turned out really well. He had just come back from a work trip to Italy and said it was as good as anything he had over there, so I was very pleased to hear that!
With Hubbard squashes, I hear the only way to open them is to drop them on the ground (e.g., on to concrete)!
With most kinds of squash, the easiest thing is not to peel it— just cut it in half and roast it as is. You can actually eat the skin if you want (lots of fiber), or just toss it.
For spaghetti squash, the microwave works really well and is super easy. I usually cut the squash and cook it one half at a time- I put it in a dish with a bit of water and some microwave-safe plastic wrap on top, and nuke until the "noodles" come off easily.
Good stuff! I just use a vegetable peeler to make thin zucchini "noodles", and then use those like pasta.

I think the distinction is that, with an omelet, the egg is folded over the filling, whereas with a frittata everything is all mixed together.
