I rewatched the first 8 episodes and the map does change. It only shows the places that are in the episode. Episode 1 had King's Landing, Winterfell, the Wall and Pentos.

Since my ability to navigate spoilers in the Expert review is 100%, I knew this was coming. And it was still like a punch in the stomach.
