I'll second what @avclub-d542a3419c3ad57206a96bcc86155ebc:disqus said about the air drying step. It is crucial to get the skin separated, etc. Many moons ago, I used a very similar recipe to this, courtesy of Ming Tsai. I used different spices but the drying method is described well. Good luck!

LOL! I did the same thing…worried about the over salting but it came out splendid. Best Turkey to date, I think this is # 6 or #7 that I have handled over the years. Adding apple cider and brown sugar to the brine was new for me this year and I really liked it. Glad it all worked out for you!
