WTF @Scrawler2:disqus I have almost exactly the same duties and turkey brine. For my brine I do not use beer but threw in some brown sugar this year in addition to the usual apple/spices concoction. It's been air drying for 36 hours now and I will also do the cheesecloth trick after the initial 45-60 minute high heat
