If Walt intended to kill him in that moment, he could have just killed him in that moment.  He had him in the desert and Saul's his bitch, he's not going to say anything.

But the missing ricin was key to Walt's giant lie to Jesse.  Whether the ricin was used or not, it had to be stolen for the fabrication to work.
