I actually wasn't very fond of the chicken plot (outside of Red's obsession and one-liners) until that final scene. Her abandoning the call for the chicken makes sense for the reasons you mention, and her going for it only to find the chicken on the other side of the fence is a surprisingly funny yet powerful moment.
