Brian Eno, of all people, did an amazing version on the "Married to the Mob" soundtrack.

While it's true that Big Star doesn't fit what we normally associate with the Stax sound, they definitely had some influences. Songs like "Feel," "When My Baby's Beside Me" and — of course — "O My Soul" definitely had a Stax influence in the mix.
