I like to think the malleable continuity is because the show is set not so much in the 80s but it more of a hazy remembrance of the 80s. I'm okay with that rationale.

I love Hannibal's long stare at whatever it is that annoys him, and can't help but grin at how Hannibal might handle the perceived slight. If Hannibal were my therapist, I'd read and memorize every book on manners and etiquette I could get my hand on.
