Punch Drunk Love has a good one, too, with Sandler bumbling around the office with Luis Guzman and the score is building and building, all percussive and tense. I think Sandler falls down at one point or maybe Guzman—it's a nice laugh that helps resolve the tension before it all starts up again.
That's one of the best scenes in his filmography. Perfect marriage of sound and fury. I think his entire career led to that sequence. And, just realized you are referring to the score more than the scene itself, but still. That score is so original, so striking.
