Definitely try the Dragon Masters. not really about Dragons, and pretty cool. Also, short enough to get through quickly.

I'd start with 'The Dragon Masters', the novella mentioned on the front cover. It's kind of a fun golden-age style Triumph of MAN type of story. I also liked City of the Chasch, from the Planet of Adventure story. I didn't really like The Dying Earth - too much magic-type stuff for me.
