Yeah, that's always a challenge. The best way I've found is to pat the whole filet with paper towels as soon as it comes out of the oil. You'll want at least 4-5 sheets of thickness between you and the hot fish, obviously (and probably a decent pair of gloves as well). Also try using less beer when making the batter,

Yup, just a basic beer batter (I like Shiner bock for fish). Its definitely a pain in the ass to do in a regular kitchen-especially if you don't have a deep fryer-but good fish and chips is hard to find where I live, so it's worth it every once in a while.
