I'll throw it out there, since a ctrl-f didn't show the name: Lucio Fulci.  Granted I haven't seen a vast majority of his early giallo work, but his best known stuff didn't get made until he was over 50.  And he kept at it, gruesomely, until he died; just try and watch "A Cat in the Brain" if you don't believe me.
