In regards to final 2, I used to think that they should go back to it, but Cagayan's near-disaster of a Woo/Kass final shows why they don't do it. If the players are at all paying attention a final 2 forces the the obvious biggest threat to win final immunity or lose. A final 3 gives more wiggle room.
