This a question to which I doubt we'll ever get an answer, but I'm happy to take this as the 'fan canon' reason why Katara was not at Yakone's trial.

What I'm actually hoping is that, at that point, we'll go inside of Korra's mind, to see Amon actually trying to bend her energy, and when he gets there, he looks around and sees hundreds of Avatars in clouds, all looking down at him with very displeased expressions.
