Klingon weddings are whatever the plot needs them to be. Back in "The Emissary / Reunion" it was all about taking the oath together and seemed relatively simple/ DS9 wanted a balls out crazy wedding to make the wedding of two main cast members a comedy event, and so that's what Klingon weddings ended up being.
