You can disable the castle one if you disconnect the wire/power source from the radio tower. Do whatever you want there, then plug it back in afterwards, though I don’t think anything really happens if you forget to plug it back in, other than you can’t pick up Radio Freedom over the pipboy. Won’t have to worry about…
Be careful with this though. If you don’t turn it in within a few days, the quest will fail, even if you already rescued the settler, or cleared out the latest area they ask you to clear out. It’s so annoying to turn it in, only to then be given another quest right off the bat.
I found that when turning in a Minutemen quest to Preston, once he starts talking about another settlement needing help, if you run away fast enough just as he starts talking about the latest raider/ghoul/kidnapping, you’ll complete the current quest, but not have to pick up yet another one right off bat.

A lot of high tech jobs are like that actually. They don’t want you developing something awesome using their funds, to then just take said product to a competitor because they offered you double the salary you get at your current company.
