That's because they need to be super bright during the daytime so that the instrument cluster doesn't get drowned out by sunlight. At night, they need to be dimmed a bit or else they would become a distraction. Sort of like how navigation systems go black at night.

Most of the newer models from the popular luxury brands (Merc, BMW, Lexus, Audi) all do not have touch screens. They're all WORSE than touch screens.
