I wouldn't use bacon fat, it has salt and other possible chemicals [to give bacon the nice smokey taste] Lard is a reasonably neutrally flavored fat [it does have a slight porky taste, just like tallow has a slight beefy taste, and schmaltz has a slight chickeny taste.]
Lots of fun [though I admit we tend to have chip and dip nights where we have guac and salsa, garlic/artichoke heart hummus and french onion dip with corn chips, potato chips and pita chips. Nice break from a more formal dinner on sunday evenings.]
