I believe it is to ‘ungender’ (disgender?) the ‘Latin_’ descriptor. If you’re male, you’re Latino. If you’re female, you’re Latina. But if you’re trans, you may choose to use Latinx.

True, but if you’re vegan, you don’t do dairy AND you don’t do eggs. While the article suggests the maker is skipping dairy because of lactose intolerance, it may be the maker is skipping dairy because she/he is vegan. 

I guess the third way (or maybe it’s the second way v2.0) would be to butterfly the breast, and then pound it. Especially with some of the crazy chicken breasts (cutlets, really) in the grocery these days, which can way close to 3/4 lb., I think you’ll be pounding a lot and mangling the protein if you don’t butterfly…
