Use a rapier or estoc +4 or +5 (hopefully) and you can normal attack with shield repetitively enough to break their poise. I have a +8 and i kill them in four quick jabs.

Looks like From in their future games should get rid of offline mode and like mmo’s keep all character information on their servers. This would eliminate cheat engine hacking and stuff like this.

I think everyone is taking this demo as gospel and need to calm their emotions down a bit. This is a TECH demo and features .2% of what the game will actually be. Don’t be so quick to write it off.
