I think you’re right to correct them. 95% chance your students are referring to her as “he” because they assume person=male unless otherwise indicated, not because they’re post-gender :)

The Ivy League is literally a sports-related grouping. It’s eight schools that are all in, for instance, the same football conference. “Regular” schools are separated the same way. 

No doubt the penalty would be the same if they played football.

It’s the only part of the Ivy League that isn’t gross, since it was originally just a sports league designation. But that’s an easy mistake to make and omg why do I know that?
