She's a stone-cold sociopath.  She may have been a little freaked out, but it's more likely she was acting "freaked out" for the sake of the FBI coming in, and some sociopaths have a pretty hard time aping human emotion.

I loved the sound editing in this episode.  The subtle heartbeat waxing and waning as Will described his hallucination to Hannibal was great.

I definitely think she knows about his psychopathy.  When she said "Sometimes all we can do is watch," she wasn't talking about Hannibal with Will.  She was talking about herself with Hannibal.

I also liked the parallel between Jack's concern for Will during the mental health discussion and with Will's concern for Jack back during the cancer discussion in the Angels episode.
