I often poach the Egg right in the bowl of super hot broth. So, broth and aromatics go in the bowl, crack egg gently into broth, cover bowl with already warmed pan lid. After 3 to 5 minutes, add the cooked noodles any other proteins, and some scallion. Comes out a super delicate egg white enrobing a soft-set yolk.
