The Astro (especially AWD) is a genuine cult item, but some of their graven images are getting a bit long in the tooth.

Cars being fried by lightening happens a lot. I do a few insurance claims a year for it, and typically try to ensure the car is a total loss early. No one wants to deal with a car that has that kind of electrical system damage. Anyways, on to my suggestion.
Used GX’s are a terrible idea. They’re overrated, unreliable, and not at all capable off road. Nobody should buy one, and if you already have one, you should sell it. Immediately. Especially if it has had regular maintenance and the larger 90k service items taken care of. Preferably in grey.

Seats 7. Not Vanilla. That’s a hell of a combination to ask for and I don’t think anything new is getting there. Maybe a used VW Eurovan - I think they seated 7 in non-Camper-van form. Of course you’re then buying a nearly 30 year old VW. But... it won’t be Vanilla - and it’ll likely be immune from lightening strikes…
Very true; but I don’t want a car that’s as fit as I am (unfortunately) now. I want a car that’s as fit as I was in my 20's (many years ago). Preferably even more athletic.

Very true. Cars have just been getting larger. If you really want to reinforce this, take a look at the dimensions of today’s Honda Civic in comparison to the original (1976) Honda Accord.

Pop out door handles are a non-started for me. Anyone in the snowbelt knows why. My friend couldn’t get his Model 3 driver’s handle to pop out (covered in ice) and I nearly ripped the handle off the passenger door until he said “don’t pull to hard, we just need to let it warm up”. We took my car.
