I always laugh at people who think that Gluten-Free means the food is good for you. After I went Vegan, people always asked me how I could eat so much gluten (because its high in protein, making it a nice meat substitute.) They assumed that just because the label says that something isn't in it, then whatever it is

No surprise. This is what happens when you live in a scientific illiterate society - instead of alchemy or magical potions we now have miracle diets, magical herbs/minerals that supposedly are "good" for the body - many of these silly fads lack independent research published in reputable journals.
