I make this style of cheese sauce all the time, and it is a pain in the ass to wait for it to thicken. But it is tasty. A hint about lumps: If they do occur, hit that stuff with a stick blender and you’re good to go. Also if your cheese curdles, like cheddar will do sometimes. Smooth as silk after that.
