The "VideoDownloader" plugin for Firefox will let you save Google Video videos right to an iPod-friendly format, and you can download the .flv file from YouTube for easy conversion with ffmpeg (or use the "SUPER" frontend if you're using Windows).

We used a program called "LeoCAD" with elementary school aged kids a couple summers ago, and it was really cool - though I probably had more fun with it than any of the kids.
