Try the microwave. I find about 10 seconds for a glass will get it to perfect drinking temp in mine.

When did Dave talk about that? Last time I heard him talking about flash chilling proteins after a sous vide bath it sounded like he went straight from hot to cold.

Except that is absolutely wrong. To get the optimal result on a grill with a piece of meat you want frequent flipping, every minute or so.

Dave Arnold would tell you to take the steak bag out of the hot bath and flash chill it in an ice bath for a minute or so to drop the temp of the exterior of the steak, then sear (or ideally deep fry!) the bejesus out of it.

Cucumbers have a great texture and an inoffensive grassy flavor. Zukes are literal garbage.
