    Interesting, I haven’t heard of any of these except for Fish Police, as it was a cautionary tale off what happens when a studio goes “Meeeee toooooo” after another studio has success with a format.     It’s down to the crystallization of the cacoa butter during tempering- ideally you want Form V, but it’s very difficult to achieve. Form IV is good though.

    Why is he using a frying pan rather than a regular saucepan? I think that might be the source of his problems...

    I prefer to use a sourdough starter rather than instant yeast,makes for a much more complex flavour.
