Whereas in the US the meat only has to be fit for human consumption at the end of the cycle, meaning that chickens can be raised salmonella…
Down side was: I wasn’t young and I’d been cooking poultry for many years. It’s just chicken never comes with giblets anymore, so I had taken it for granted that this particular one didn’t too.

At least with turkey I dry brine it and kick off the giblet stock gravy the night before so that’s not likely to happen.
That’s awesome, I should look at that myself (thankfully we don’t have the same issues with salmonella over here).
