I would install a water softener system for the water lines. Quite common. And EXPENSIVE.

Note the temperatures of the water in the sinks. Pre-cleaning is THE MOST IMPORTANT STEP. As is the cleanliness of the rinse and sanitizer water.

No problem, this stuff is important and gets overlooked especially at bars. For example...per FDA’s guidelines, dishes should always be allowed to air dry, and are never to be dried with towels.

If a proper triple sink sanitizer system is in place AND being used and maintained properly, the dishes should be clean.

Preach. My son is over in Valencia at school he said NOBODY considers themselves “A Spaniard,” they call themselves by their region. People are Catalonian or a Barcelonan or a Valencian...it is an interesting cultural distinction and wonder how something like that would go over here in America.
