Most mapping systems don’t just use the raw data. They will use something like a map matcher (https://en.wikipedia.org/wiki/Map_match…) to “snap” your raw gps data to something more expected. Map matchers are used 100% of the time for driving apps which is why you are always on a road. I’m not sure what sort of system
