Tomato was incorporated into Greece a few centuries after it reached Italy, that may be why pastitsio is boring and cheesy compared to most lasagna, though of course there’s variations on lasagna that have no tomatoes.

I’ve made pastitsio, spaghetti pie, chili-mac, various lasagnas, various frittatas, chicken riggies, baked ziti, baked stuffed shells, spatzle, gnocchi, various chilis including Cincinnati Chili etc. Made pasta from scratch a bunch of times. I’ve had pastitsio out in decent Greek restaurants.

I sort of want a dozen other people to enter the field and then withdrawing the next day, just so he wastes time coming up with nicknames for them.

On further reflection, maybe pastitsio is just dull lasagna that someone was too lazy to layer.
