Sorry, can you clarify “let it marinate overnight in the fridge”? Does that mean marinate the eggplant before frying, or refrigerate the entire mixture after combining and adding lemon? Is the dish served cold? It sounds good but having never experienced this dish I’m a little confused.

Curious about the resting in the fridge part. Did you toss the whole vacuum sealed bag unopened into the fridge? Or did you remove it from the bag?Couldn’t tell in the picture if both filets were in the same or separate bags.
