I see Logan's smile as two fold.
1. He realizes he has gotten to a level in the park that he hasn't gotten to before. As we saw from his sex scene, he does like the rough stuff.

With how tied into americana and the myth of the old west that the Bowie knife is, I can easily see it being that way.

The layers on Dolores story (and the inherit nature of looping) are a treat in this show. I think when the series is done (or at least s1) viewers should go back and re-watch all of her scenes with a much deeper eye.
I didn't see a freak out. More of a blank look as his body went into auto-pilot. But perhaps Marsden threw in something as well along those lines. Early on the creators of the show have said it is the subtle little things that betray a characters host or guest nature.

I read the same article. Nolan has stated that the park has been around a long time like Disneyland has for us. Not necessarily equal in number, but at least a long enough time for it to be old hat. I put it at 50+

You will also notice that the "El Lazo" Lawrence we meet in Pariah is much more finely dressed and eloquent in his interactions. Which lines up perfectly with Ed Harris comments a few weeks ago when we met him of "you used to have a much more eloquent vocabulary"
