I found a local market that sells yellow beets, no stains. My favorite beet recipe: Beet Rosti. From Mark Bittman, NY Times. Basically, a beet pancake. Grated beets, rosemary, flour. Frying in butter gets rid of that sweet dirt flavor. Dollop of yogurt or sour cream on top or add a fried egg.
Never mind the whole mac and cheese vegetable “do or do not” discussion. Something way more important.

This is why I have a little herb planter on my porch. Lemon thyme and chives. I’ll use just brown mushrooms, but the best butter I can find. If I’m too lazy to Mornay, a layer of grated Gruyere on the toast, mushrooms on top and the egg last. Lovely.

I work on this project. I transcribed a letter from Sarah Moore Grimké to Queen Victoria, imploring Her Majesty to support the cause of abolition in the United States. I also transcribed the petition that was sent to abolitionists as they traveled the country gathering support for legislation in Washington.
My neighbor went full metal farmer. He bought wood for planters, bags of potting soil. It looks like he planted corn from seeds and a few veggies from small plants. I’m not seeing a lot of growth, and the leaves on the baby corn plants look dry: not enough water.
