You had me until english muffin :P but I won’t fault you for personal taste. I worked in a Italian Deli with access to kaiser rolls and club rolls (my personal fave for a BECSPK since the bacon would go the length of the club).
As a New Yorker, seeing “bacon” eggs and cheese cooked that way is repulsive.

Thank you. I use a 4-qt pot covered with foil, a hole in the middle (Thanks Claire). Once the popping starts I shake till the popping slows down to a few seconds, turn off the burner, wait till the popping stops, take foil off.

I use a 12 inch skillet for this because I’ll put bread in once the whites are firm enough to avoid soaking into the bread. Give the bread a flip, add some grated cheese and once the cheese has begun to melt, put the eggs on top.
I can attest to your benchmark idea, because I live in Westchester County NY which has quite a number of pizzerias. When I’d go to a new one, I’d order two plain slices. If I see a lot of oil on a slice, I’ll fold and tilt it over the plate to see how much comes off. If there’s a lot and the pizza doesn’t taste good…
Ironic, a lot of movies leaving October 31st would be perfect viewing for Halloween.
