I made one of the NYT’s ground beef/mushroom blend burgers and felt like the recipe should have called for cooking some of the moisture out of the mushroom before combining with the beef.  Kind of like Wellington. The burgers were fine, but a had some structural integrity issues I associated with the extra moisture.
