The battle of Malachor from the KOTOR games is apparently canon, since it’s referenced in the TFA art book.
#1 The EU was never canon. Elements in the prequels even debunked it. It was always just a series of authorized fan-ficton, some of which had elements used in the films.
#2 Darth Plagueis is canon. He was even mentioned in Episode 3.
#3 The Star Wars films were always about the Skywalkers.
